Ingredients you will need
3 free-range eggs 10g unsalted butter 1 thick slice ham, finely chopped
Step 1-Gently beat the eggs together in a mixing bowl and season, to taste, with salt and freshly ground black pepper.

Step 2-Heat the butter in an omelette pan until foaming. Pour in the beaten eggs and cook for a few seconds, until the bottom of the omelette is lightly set.

Step 3-Push the set parts of the omelette into the uncooked centre of the omelette. Cook again, until the omelette has set further, then push those set parts into the centre of the omelette again.

Step 4-Repeat the process until the eggs have just set but the omelette is still soft in the centre

Step 5-Place the into the centre of the omelette.

Step 6-Increase the heat to high and cook the omelette for a further 30 seconds, or until it browns on the bottom

How to make a Apple and Celeriac soup

Ingredients needed  1 small celeriac, peeled and chopped1 tsp. chives1 medium onions1 tub crème fraiche1 tbsp. blended olive oil 2 bramley cooking apples, peeled and chopped2 tbsp. horseradish sauce 1 litre vegetable stockStep 1- Heat the oil in a large saucepan, add the onion and cook until softened. Stir in the celeriac and apples and cook covered over a gentle heat for 10 minutes, shaking the pan from time to time, to mix.
 Step 2- Pour over the stock and bring to the boil. Reduce the heat to a gentle    simmer and cook covered for about 30 minutes until the celeriac is soft.  Step 3- Remove from the heat. Blend until smooth. Serve topped with a little crème fraiche, or a few chopped chives and black pepper to taste.

350g/12oz pork fillet Salt Freshly ground black pepper 2 tbsp sunflower oil 25g/1oz butter 1 onion, finely sliced 2 tsp paprika 225g/8oz button chestnut mushrooms, halved 5fl oz/140ml carton sour cream 1 tbsp lemon juice 1 tbsp chopped fresh parsley Step 1-Remove any membrane from the pork fillet and discard. cut into thin strips on the slant about 1cmx6cm 1/2inx 21/2in. Step 2-Heat a large non stick frying pan until hot, add a little oil when very hot and add the meat. Stir fry really briskly until brown, if cooked really fast there should be no juices, but take care not to overcook. Lift out with a slotted spoon onto a plate. Step 3-Measure butter to the pan, add sliced onions, cook over a low heat until the onions are really tender. First you will need to know how to make a short paste

Ingredients you will need
200g flour(soft)1  pinch of salt50g vegetable fat 50g butter or margarine 2-3 tbsp water Step 1-Sieve the flour and salt.

Step 2-Rub  in the fat to achieve a sandy texture.

Step 3-Make a well in the centre.

Step 4-Add sufficient water to make a fairly firm paste. 

Step 5-Handle as little and as lightly as possible


To make the Cornish pasties you will need
200g of short paste 100g potato (raw),finely diced 100g raw beef,chuck or skirt, cut in thin pieces50g onion or leeks chopped 50g swede (raw),finely diced (optional)eggwash Step 1-Roll out the short paste to 3mm thick and cut into rounds 12 cm in diameter .Quickly brown the meat in oil, drain and cook quickly.

Ingredients you will need 200g Flour(strong) 5g yeast 60ml milk  1 medium egg  50g butter or margarine 25g caster sugar Step 1-sieve the flour into a bowl and warm Step 2-Cream the yeast in a basin with a little of the milk. Step 3-Make a well in the centre of the flour. Step 4-Add the dispersed yeast, sprinkle with a little flour ,cover with a cloth, leave in a warm place until the yeast ferments (bubbles). Step 5-add the beaten egg, butter ,sugar, and remainder of the liquid. Knead well to form a soft, slack dough, Knead until smooth and free from stickiness.  Making the donuts. Step 1- Put the dates in a small saucepan and pour over 75ml water. Bring to a simmer and cook for 3-4 mins until the dates are mushy and have absorbed the water. Gently stir to blend. For the glaze 1 egg white, lightly beaten The method Step 1- First to make the pastry, dice the butter and put it in the freezer to go really hard. Tip flour into bowl of food processor with half the butter and pulse to the texture of breadcrumbs. Step 2-Pour in the lemon juice and 100ml iced water, and pulse to a dough. Tip in the rest of the butter and pulse a few times until the dough is heavily flecked with butter. It is important that you don't overdo this as the flecks of butter are what makes the pastry flaky.
