How to make profiterroles

Hi everyone in todays post ill be telling you how to make profiteroles I hope you enjoy


To make the profiteroles you will need
  • water          1/4 litre
  • sugar          pinch
  • salt             pinch
  • margarine   100g
  • Flour(strong)125g
  • eggs            4

Step 1-Bring the water,sugar,salt and fat to the boil in a saucepan. Remove from heat.

Step 2-Add the sieved flour and mix in with a wooden spoon.

Step 3-Return to a moderate heat and stir continuously until the mixture leaves the sides of the pan.

Step 4- Remove from the heat and allow to cool.

Step 5-Gradually add the beaten eggs, beating well, Do not add all the eggs at once-check the consistency as you go, The mixture may not take all the egg. It should just flow back when moved in one direction.

To make the pastry cream you will need

Milk                   500ml
vanilla pod         1
eggs                  2
caster sugar       100g
strong flour        50g
custard powder   15g

Step 1- Split open the vanilla pod and scrape out the seeds. Place pod and seeds in a heavy stainless steel pan, add the milk and place on the heat.

Step 2-whisk the eggs and sugar together

Step 3- Sieve the flour and custard powder onto paper and then add to the eggs. Whisk  hem all together to form a liaison.

Step 4-When the milk has boiled ,pour about one third into the egg mixture and whisk in.

Step 5-Bring the rest of the milk back to the boil, then pour in the liaison, Whisk hard until the mixture comes back to the boil again.
