How to make Ratatouille

Hi everyone today ill be telling you how to make Ratatouille



Serves 4 portions

Ingredients you will need
  • 200g  Baby marrow (courgette) 
  • 200g  Aubergines  
  • 200g  Tomatoes
  • 50ml  Oil
  • 50g    Onions. finely sliced
  • 1        Clove of garlic, peeled and chopped
  • 50g    Red peppers, diced
  • 50g    Green peppers, diced
  • Salt,   pepper
  • 1 tsp  Parsley, chopped

Step 1-Trim off both ends of the marrow and aubergine.

Step 2-Remove the skin using a peeler.

Step 3-Cut into 3 mm slices.

Step 4-Concasse the tomatoes (peel, remove seeds, roughly chop).

Step 5-Place the oil in a thick-bottomed pan and add the onions.

Step 6-Cover with a lid and allow to cook gently for 5-7 minutes without colour.

Step 7-Add the garlic, marrow and aubergine slices, and peppers.

Step 8-Season lightly with salt and mil pepper.

Step 9-Allow to cook gently for 4-5 minutes, toss occasionally and keep covered.

Step 10-Add the tomato and continue cooking for 20-30 minutes or until tender.

Step 11- Mix in the parsley, correct the seasoning and serve.

The vegetables need to be cut evenly so that they will cook evenly; it also improves the texture of the dish.

Healthy eating tips
  • Use a little unsaturated oil to cook the onions.
  • Use minimum amount of salt.
